Shrove Tuesday (also known as Pancake Tuesday and Pancake Day) is the day preceding Ash Wednesday, the first day of Lent. Pancakes were a way to use up rich foods such as eggs, milk and sugar, before the fasting season of the 40 days of Lent.
As a child I loved pancake night. It was such a treat to have pancakes after tea on a school night. My mum would make just plain pancakes sprinkled with sugar and spritzed with lemon. And that's just how I like them even now. Plain and simple.
There are many versions of ingredients to make pancakes and here is mine that I made tonight and we enjoyed after tea .....
Ingredients
1 cup of plain flour
1 1/4 cups of full cream milk
1 egg lightly beaten
sugar enough to sprinkle
and a squeeze of lemon
butter enough to melt in the pan
What to do
Make a well in the middle
Whisk in egg and milk a little at a time, making sure it is smooth and silky and no lumps. If it seems a little thick add a few drops more milk
Leave to rest in the bowl for 30 mins
Heat the butter in the pan and add the pancake mixture to cover the bottom of
the pan to make thin light crepe like pancakes.
If possible flip to cook both lightly brown.
Serve on to a plate sprinkle with sugar, roll and add a squeeze of lemon.

DeleteGreat pancakes! I made 30 of them for a charity fundraiser last night so sadly couldn't face eating any. I will rectify this sometime soon. I served them all with lemon and sugar - what a classic!

DeleteWhen I was growing up we always celebrated Pancake Tuesday and my mother would make crepes all day and there would be savoury crepes for the main course (meatless!) and then dessert crepes later. It was always a very special night of the year and I should start up the tradition again - I just wish my mother hadn't have sold her crepe pan in a garage sale! xx

DeleteWe had two different types - the traditional, thin with lemon and sugar with a little dish of strawberries on the side and Nigella's Ricotta Hot Cakes - one child likes them thin and the other likes them thick so two types it had to be. Me? I like them all!

I am such a hoarder I NEED to do this too! I certainly need a bit of encouragement - I looked at my one bag tonight. My eldest daughter is a vegetarian and loves my pancakes - she fills them with spinach and ricotta but are equally good with fruit as I am sure you know. Looking forward to droping by to see how your decluttering is going.

ReplyDeleteI have such good childhood memories of pancakes. I remember when we were tiny my dad always had lots of friends visiting and they would have big debates on all kinds of interesting things long into the night. All these young men would soon get ravenous and my mum, who didn't have much in the pantry would make up big batches of pancakes with lemon and sugar. We, me and my three sisters would smell them baking from our beds where we had been tucked up for the night, and sit on the stairs to see what was going on.
